Healthy Recipe - Dijon Turkey Burger: Makes: 6 servings, Ingredients: 1 lb. ground turkey breast, 1/2 cup bread crumbs, preferably whole-wheat, 2 cloves garlic, finely minced, 1/2 package (10 oz.) frozen chopped spinach, thawed and drained 1/3 cup chopped onion, 6 Tbsp. Dijon mustard, divided, Salt and pepper, to taste, 1/4 cup sliced roasted red peppers, 6 oz. part-skim mozzarella cheese, cut into 6 slices (optional) Direction: In a large bowl, thoroughly combine the turkey, bread crumbs, garlic, spinach, onion, 4 tablespoons of mustard and salt and pepper, if desired. Shape the turkey mixture into 6 patties. Cover them with plastic wrap and chill for about 30 minutes.
